Premium selection of Culatello cooked in cloth with rind removed

Raw material:

Topside, silverside and eye of round, obtained from selected fresh,Italian pork leg without shank weighing 13.50 kg, trimmed and defatted of excess, rind removed. The less noble parts – shank, knuckle, and walnut cut – are also removed. The meat is cooked wrapped in cloth to retain cooking juices in contact with the product.

With no added polyphosphates, milk derivatives and gluten.

Packaging:

After cooling, it is wrapped in a resealable protective elastic sleeve, then tied, packaged in a transparent Cryovac pouch, and pasteurised.
