The fiocco (lean cut), of the fresh pork leg is injected with brine consisting exclusively of water, salts and natural flavourings, with no added polyphosphates, sugars, gluten, milk derivatives or glutamate.

Natural flavour extracts are produced by boiling whole vegetables and spices.

Then the fiocco is massaged to completely absorb the brine and soften the muscle mass in order to facilitate the moulding phase that comes next, which consists of placing the meat inside the mould to be baked in the steam ovens.

After cooking, the product is cooled, removed from the mould, WRAPPED IN A RESEALABLE PROTECTIVE ELASTIC SLEEVE, tied and vacuum-packed in a transparent Cryovac pouch.

To prevent any kind of bacterial contamination, the fiocco undergoes further heat treatment after packaging.

Steamed fiocco, obtained from fresh leg – unit size of fresh product 3.50 kg – trimmed and defatted of excess, with no added polyphosphates, sugar, milk derivatives, gluten or glutamate. After cooling, the de-moulded fiocco is packaged and pasteurised.

N.B. Nitrites: The use of nitrites, in the minimum quantities permitted by law, is still recognised as essential to prevent the risk of botulinum and cannot yet be definitively eliminated.
