This is a steam-cooked prosciutto cotto, made from selected fresh national pork leg, without shank.

Unit size 13.50 kg – trimmed and defatted of excess, with no added polyphosphates, allergens, milk derivatives, gluten or glutamate. Packaged in a transparent window pouch and pasteurised.

Taste profile:

buttery and soft on the palate, well-defined and decisive flavour, “aroma antica” (reminiscent of traditional kitchens and methods) mellow mouthfeel in the finish complemented by a distinctive shape and yield that make it unique
