THE COMPANY
The History of Pertus
PERTUS is an artisanal company from the Province of Lecco on Lake Como.
“Pertus” is not an invented name. It means pertugio, a narrow passage, a point of communication between two valleys. And it is precisely the “Passo del Pertus” (Pertus Pass) that connects the Imagna Valley and the San Martino Valley in the province of Bergamo. A place frequented by Francesco Lissoni in his youth. He was commonly known in Brianza as Franco, and it was he who founded Pertus in 1983. The name itself reflects his commitment to quality and meticulous care in the production process, with the goal of creating unique, niche artisanal products distinguished by a touch of elegance, far removed from industrial production.
The careful selection of raw materials, exclusively of Italian origin, the balanced bouquet of aromas, the care dedicated by our mastri norcini – expert artisans in the tradition of Norcia – and the design all make our ITALIANO 1930 prosciutto cotto a unique product with a balanced but decisive flavour, full of vitality and with an intense and lingering aftertaste.
CE mark
L’ITALIANO 1930: an artisanal product, made with pork legs sourced from pigs born, raised, and slaughtered in Italy. A high-quality prosciutto cotto produced according to traditional methods, yet designed to meet the demands of today’s increasingly discerning consumers.
Franco wanted to create a company specialised exclusively in the artisanal production of high-quality prosciutto cotto. And he succeeded, also thanks to his children and staff, who are continuing his mission today, guaranteeing tradition but with an eye on the future.
Careful sourcing of raw materials and over twenty years of experience guarantee the creation of premium products, made exclusively from fresh, carefully selected ingredients of Italian and EU origin.
On 21/06/1995, PERTUS obtained the CE MARK for processing, issued by the Ministry of Health – Food Hygiene and Nutrition Department, Rome, a certification that guarantees the quality of the products, thanks also to the rigorous self-control programme required by the Ministry.
All our prosciutti cotti (cooked hams) are made without shank and with no added polyphosphates, milk derivatives or gluten.
